Sopa de Tortilla Verde (Green Tortilla Soup)

I had planed to share another recipe from the “Little House” books but my sourdough starter disappeared today, so sourdough biscuits did not get made. Oh, the joys of communal living. Hopefully, it didn’t get thrown in the garbage by someone who didn’t know what the smelly stuff was. Instead, today’s recipe is especially for Heather of Girlichef who is on a quest to try as many kinds of tortilla soup as possible. This is a very simple soup to prepare. I had wanted to fry some of the tortillas but time would not allow. Cooking the tortillas in the soup gives it a great flavor and thicker texture.

Sopa de Tortilla Verde
4 Quarts Chicken Stock
2 cups salsa verde
1 tsp salt
3 chicken legs or thighs, shredded
6 shredded tortillas
Cilantro to garnish
2 avocados to garnish
1. Combined everything together until heated through, about 30 minutes.
2. Garnish each bowl with chopped cilantro and chunks of avocado. Enjoy!

    Katie, so sorry about your sourdough starter! Only a foodie would understand the pain of that type of loss! Hope you find it somewhere!
