Indian Lentils

Who doesn’t love Indian food? It’s one of my favorite things to eat. Especially lentils and naan. This is a easy and filling dish to make. So yummy too!

Indian Lentils

½ cup red lentils
½ cup yellow lentils
2 TSB apple cider vinegar
3 cups water
 
Leave to soak for at least seven hours.  Then strain off the water and add 3 fresh cups of water and add:
 
4 dried red chilies
½ tsp ground cumin
½ tsp  ground coriander
1 tsp turmeric
1 TBS freshly grated ginger
2 TBS butter
 
Bring to a boil and cook for about 20 minutes until soft.  
While the lentils are cooking sauté:
 
1 medium onion sliced
2 medium tomatoes chopped
2 jalapeños thinly sliced
½ tsp yellow mustard seeds
½ tsp black mustard seeds
1 TBS butter
 
When the lentils are soft and the onion mixture is cooked mix together and add salt to taste. Great when served with brown rice or flat bread.

    Danny and I just went to all you can eat indian food (yeah is was expensive, but it was fun). TO DIE FOR! So stinking good. I need to start making more indian and thai food.
