Chocolate Cupcakes (soaked)

I don’t know about you but I love chocolate. Since the fall I have been trying my best to soak all my flour before baking. One of the things I love about soaking my flour is that it expands as it absorbs the liquid and makes the batter stretch further. One Saturday about a month ago I made these cupcakes in my toaster oven while my girls cleaned the dorm. It took awhile but the results were well worth it, my girls can attest to that as well.

Chocolate Cupcakes

2 1/2 cup whole wheat flour
1/2 cup cocoa powder
2 cups raw milk
4 TBS Apple Cider Vinegar

Mix together and soak for 12 to 24 hours.

Add:

4 TBS Coconut Oil
1/2 cup raw milk
1 TBS Vanilla
1 Cup Maple Syrup
2 eggs
1 tsp sea salt
2 tsp baking soda

Mix together and pour into lightly greased cupcake tins or use paper liners if you have them. Bake at 350 F for 30 minutes. Makes 24 cup cakes.

    Wow…these look delicious and I have all the ingredients on hand! I’m a chocoholic so this is right up my alley! And I love that they’re soaked too. I’m definitely going to have to give these a try.

    Wow, those look super moist and yummy. I’ve come to really enjoy soaking flours because the different texture upon baking. Thank you for sharing your recipe with the Hearth and Soul hop.

    Simple chocolate cake is one of the great joys in life (I think)…and your cupcakes definitely fit that bill! I still have never soaked, but I’m tempted to try after seeing how delicious these look…thanks so much for always sharing with the hearth and soul hop =)
