Here is my new favorite way of making stuffing that uses the crock pot. It’s perfect to free up some oven space for the turkey, rolls, green bean casserole or anything else you might be baking. To find out how to make your own dried bread cubes and two other Frugal Thanksgiving Tips read my post at Frugal Granola.

Crock Pot Stuffing

12 cups dried bread cubes
2 cups of celery, finely chopped
2 cups onion, finely chopped
1/4 cup parsley fresh, coarsely chopped
4 cups turkey or chicken stock
6 TBS butter (4 if using fresh stock with fat in it)
11/2  tsp salt
2 tsp sage, dried and powdered

1/2 tsp black pepper
1 tsp thyme, dried and powdered

Melt the butter in a skillet over medium heat. Sauté the onions, celery and parsley until soft and translucent.

While that is cooking, in a large bowl combine the bread cubes and spices, mixing thoroughly. Then pour the stock and sauteed vegetables over the bread cubes and spices. Mix gently. Pour into a large crock pot and cook on high heat for about four hours. Turn down to warm until ready to serve.
