Coconut Ginger Chicken with Coconut Rice

The lazy days of summer are quickly giving way to the busy schedules of fall with school, sports, Bible Studies and other activities starting up again. It is nice to have a meal that you can quickly put together and them forget about for the next few hours.
 
My slow cooker and rice cooker get used several days a week year round. I am even more grateful for them on those busy days. This dish is full of flavor without being very time consuming. I choose to use white rice instead of brown because it highlights the flavor of the coconut. It’s nice to have a special treat now and then.
