Simple and Nourishing Beef Stew

Hearty and warming, this simple and nourishing beef stew takes only a short time to make and is perfectly cozy. 

Cool days leave me wanting to stir a simmering pot of stew while a crusty loaf of bread bakes in the oven, days that warm the body and soul. (This post was originally going to go live in January, but alas, life happens, and here we are in March.)

Dishes like this simple and nourishing beef stew are full of flavor despite the short ingredient list. When I make rustic bread and soup, I’m glad that I have two Dutch ovens. Discount stores and estate sales are great places to find Dutch ovens that don’t break the bank!

Simple and Nourishing Beef Stew: Why It Needs to Be in Your Life

A few years ago, I was craving beef stew, but I was short on a good roast and even shorter on time. There are times that I love recipes that require afternoons in the kitchen, but sometimes the days are long, and we aren’t able to spend all day with a pot simmering away. So, I decided to pull out some ground beef and create a dish that was still full of the rich flavors I desired while not needing to spend half the day in the kitchen.

Simple and Nourishing Beef Stew

Yield 4-6 serving

Hearty and warming, this simple and nourishing beef stew takes only a short time to make, yet it is perfectly cozy. 

Ingredients

  • 2 lbs ground beef
  • 4 russet potatoes, diced 
  • 4 large carrots, diced
  • 1 medium onion, diced
  • 2 cloves garlic
  • 1/2 cup tomato sauce
  • 4 cups broth 
  • 1/4 cup red wine
  • 2 bay leaves
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon unrefined salt (divided into two 1/4 teaspoons)
  • 1 teaspoon freshly ground pepper

Instructions

  • In a large pot or Dutch oven, heat the olive oil over medium heat until hot. Add the onions, sprinkle with 1/4 teaspoon of salt, and saute for 5-7 minutes or until soft, stirring occasionally to prevent burning. 
  • Add the garlic and saute for one more minute. 
  • Add the ground beef. Sprinkle with the remaining 1/4 teaspoon of salt, paprika, and black pepper. Stir to mix in the spices. Cook the ground beef over medium heat until just browned. Pour in the tomato sauce and stir gently until combined.
  • Pour the broth and red wine into the pot. Gently add the carrots and potatoes. Add the bay leaves. Stir to combine and bring to a boil. Once boiling, reduce to a low simmer. Cover and cook over low heat for 3o minutes, stirring occasionally to prevent burning. 
  • Top with freshly chopped parsley, and serve with rustic buttered bread and a salad if desired.

    That’s sounds delicious! Thanks for a quick hearty recipe! In our area, were getting Greta sunny days where you don’t want to be in cooking, but then evenings are still have pretty cool, so this would be perfect!
