How ever you call it this avocado dressing/ guacamole is wonderful! It is a combination of a recipe from a former staff at our school, Kimi’s recipe from her book Nourishing Salads for All Seasons and my own ideas. It is perfect to top your tacos, salad or any Mexican dish. Another great thing about it is that it stays fresh in your fridge for up to two weeks! Now that’s what I’m talking about. Normally guacamole goes bad after a day or so even if you leave the pits in. The olive oil, lemon juice and onion help preserve the freshness and color. It also stretches the avocados so you don’t have to spend as much money on those expensive yet delicious things! To cut the costs even more you could leave out the olive oil but I’m not certain if the purple onion and lemon alone would preserve it as long.
Simple Avocado Dressing/ Taco Stand Guacamole
Makes about 1 quart
4 large avocados (my favorite is Fuertes)
1 1/2 cups olive oil
1/2 to 1 cup water
4 cloves of garlic
1/4 of a medium purple onion
Juice of two medium lemons/limes
1 tsp salt (Real or Celtic), plus more to taste
Split the avocados in half, removing the pits. Add every thing to a blender and puree until smooth. Start with 1/2 a cup of water and increase as needed or desired. For a salad dressing I prefer it a little thinner but for Mexican dishes I prefer it a little thicker.
