Guacamole is a yummy addition to any Mexican meal. Until I came to Mexico I was convinced that I didn’t like avocados, now I love them! So yummy and full a good fats.
2 semi-soft large avocados (Fuertes are my favorite for their creaminess)
1/2 medium onion
1 medium tomato
About 8 sprigs of cilantro
1/2 tsp sea salt
1/2 tsp garlic powder
1/4 cup of water
Cut the avocados and remove the pits. Scrap the avocado into a bowl and mash until soft. Mix in the water. Chop the onion, tomatoes and cilantro to the size desired. Add to bowl. Sprinkle the salt and garlic powder over the avocado mixture. Squeeze the juice of half a lime or lemon into the bowl. Gently stir everything together. Tip: To keep the guacamole from turning brown so quickly add the avocado pits to retain freshness and color. The lime juice helps with this as well.
