Creamy Coconut Hot Cocoa

Yesterday while reading some of my favorite blogs I came across  a delightful recipe for a hot chocolate from Kimi at The Nourishing Gourmet. As soon as I read the recipe I knew that is would taste delicious with my oatmeal chocolate chip cookies. I didn’t have all the ingredients that Kimi used so I had to modify it a lot. I made this while the rain was pouring down and my girls were contentedly making friendship bracelets in our dining hall. A perfect day for a hot drink!

Creamy Coconut Hot Cocoa

1 Can Whole Fat Coconut Milk
3 Cups Water
3 TBS Cocoa Powder
1/4 Cup Honey
1 tsp Vanilla

Bring the coconut milk and water to a low boil. Add the honey and slowly whisk in until it dissolves. Whisk in the cocoa powder one teaspoon at a time. Remove from the heat and add the vanilla. If you’re in the mood for mint add a few drops of peppermint oil. Best enjoyed on a rainy day in front of a warm fire with a good book!

    Laura, it is so good, you won’t regret trying it. It is also good made with raw milk instead of the water and coconut milk but I like the coconut milk much better. I’m the the one that bought your baskets buy the way! 🙂

    Oh, I bet my children would love this hot chocolate recipe (who wouldn’t??). I’ve bookmarked it to give it a try next time. Got to go get some coconut milk…
