Thai Fried Rice

I love Thai food! It is so fragrant and popping with flavor. This rice is simple to throw together, especially if you have leftover rice in the fridge, making it a perfect last minute dinner. Feel free to add more vegetables or a meat. This is just how I prefer to make it. Don’t worry if you don’t have thai basil, you can substitute sweet basil if needed. The flavor won’t be quite the same but still delicious.

Thai Fried Rice 


serves 2 as a main dish or 4-5 as a side


3 TBS coconut oil
1 medium onion, finely diced
2 cloves, crushed garlic
1 TBS fresh ginger, grated
2 cups fresh peas
1 cup packed fresh thai basil, thinly sliced
2 TBS red curry paste
4 eggs, beaten
2 TBS soy sauce
4 cups cooked white rice 0r soaked brown rice
Salt to taste
Additional basil to garnish (optional)
Spearmint (optional)

Saute the onions until almost soft in 2 TBS of coconut oil. Add the garlic, ginger and peas and saute until the peas are cooked but slightly firm. Add rice, soy sauce and and red curry paste, stir gently to mix in the vegetables. Make a well in the center of the pan. Add one TBS of coconut oil and gently scramble the eggs. Once the eggs are cooked add the basil and gently mix together. Add salt to taste and garnish with additional basil and spearmint if desired.
