Something so pretty has to be complicated right? This simple saffron rice is just that, simple. It's fun to have a recipe in your box that is delicious, beautiful, and easy to prepare.
Ingredients
2 cups bastmati rice (or other long grain rice)
4 cups chicken broth
1/4 cup boiling water
2 tablespoons butter
1 tablespoon olive oil
8-12 threds of saffron
chopped parsley (optional)
Instructions
Toast the rice over medium-high heat with the butter and olive oil. Stir frequently until the rice is lightly browned.
Pour in the chicken broth and salt, stir, and allow to come to a boil.
While the rice is cooking, crush the saffron with a mortar and pestle. Put the saffron in a small heat resistant cup. Cover the the 1/4 cup of hot water.
Once the liquid has almost evaporated, poke several holes in the rice. Pour in the saffron and water.
Cover and reduce the heat to low. Cover and allow to steam for 8-10 minutes.
Remove from the heat, fluff, and serve with at the protein and vegetable of your choice.
