Hearty and warming, this simple and nourishing beef stew takes only a short time to make, yet it is perfectly cozy.
Ingredients
2 lbs ground beef
4 russet potatoes, diced
4 large carrots, diced
1 medium onion, diced
2 cloves garlic
1/2 cup tomato sauce
4 cups broth
1/4 cup red wine
2 bay leaves
2 tablespoons olive oil
1 teaspoon paprika
1/2 teaspoon unrefined salt (divided into two 1/4 teaspoons)
1 teaspoon freshly ground pepper
Instructions
In a large pot or Dutch oven, heat the olive oil over medium heat until hot. Add the onions, sprinkle with 1/4 teaspoon of salt, and saute for 5-7 minutes or until soft, stirring occasionally to prevent burning.
Add the garlic and saute for one more minute.
Add the ground beef. Sprinkle with the remaining 1/4 teaspoon of salt, paprika, and black pepper. Stir to mix in the spices. Cook the ground beef over medium heat until just browned. Pour in the tomato sauce and stir gently until combined.
Pour the broth and red wine into the pot. Gently add the carrots and potatoes. Add the bay leaves. Stir to combine and bring to a boil. Once boiling, reduce to a low simmer. Cover and cook over low heat for 3o minutes, stirring occasionally to prevent burning.
Top with freshly chopped parsley, and serve with rustic buttered bread and a salad if desired.
