This simple and highly nutritious sorbet is my becoming my new favorite. It is so light and refreshing. My girls quickly devoured it, no more left! Never has a sorbet or ice cream been so easy to make. Now mind you I had very ripe mangos so all I had to do was rinse them off, make a little hole and squeeze them out! I added a bit of honey, blended it up, poured it in the ice cream maker and voila! It was finished. The mango were so sweet that I didn’t even need to add honey. It really depends on the sweetness of the mangos. Here’s what my friend Mare has to say about the amazingness of mangos:

Comforting Health Benefits

A true comfort food… Mangos are revered not only for their exotic sweetness and juicy quality, they are also known for their many health blessings. They contain an enzyme similar to papain in papayas, a soothing digestive aid. Mangos also contain a lot of tryptophan, the precursor of the”happiness-hormone” serotonin. These comforting enzymes can be held mostly responsible for that feeling of contentment we experience during and after our daily mango enjoyment. These proteolytic enzymes that break down proteins are effective meat tenderizers (Check out my recipe!) regularly used in tropical countries where mangos are grown. The enzyme list continues with magneferin, catechol oxidase, and lactase that not only protect the mango from insects, but it can help us by stimulating metabolism and purifying the intestinal tract.

Simply Delicious Mango Sorbet

4 to 5 ripe mangos
1/4 cup raw honey (if desired)

1. Squeeze out or cut your mangos. Add to a blender and blend with the honey.  Pour the liquid into your ice cream maker and churn for the a lot time your maker. Easy as that!!

Note: This sorbet is best when eaten right after it is done churning. It gets very hard when frozen, so it is best to let it set out for about 20 minutes before serving to defrost.

yummmm. My latest discovery [much less healthy but so delish] : equal parts of lemon curd and cream; into the ice cream maker and churn till frozen. See you in a few weeks : )
