Red Potatoes with Dill

This recipe takes me back to when my family used to go to Boston Market on occasion. I loved their red potatoes with dill. I don’t go there anymore but occasionally I still miss them.

A few miles down the road there is an organic farm that has all sorts of yummy veggies, honey, breads, eggs and much more. One day while I was there I picked up some dill and decided to make the potatoes that I remembered loving as a girl. They turned out so good that I can’t wait to try them again!

Red Potatoes with Dill

8 red potatoes, cubed
4 TBS fresh dill, chopped
2 TBS garlic herb butter
Salt and pepper to taste

1. Cut the potatoes in to small cubes, leaving the skins on. Boil until soft and drain off the water.
2. Add the dill and butter stir gently. Salt and pepper to taste.

Garlic Herb Butter

1/2 1lb butter, softened
2 TBS fresh rosemary, chopped
3 cloves garlic, crushed
1/2 TBS fresh oregano, chopped

Mix all together and keep in a small glass container. Last for about a month.
