Peppermint Hot Cocoa {with Vegan Options}

Today is our first real day of winter chill. It’s finally cold enough to bundle up when going out. It also makes is cold enough to wear layers indoor. We are drinking lots of hot drinks to stay warm.

Since I was little I have loved all things peppermint. When chocolate and peppermint are combined some of the world’s most delicious treats are created. My fondness for mint has trickled down to all my dorm girls. Often when given a choice of birthday ice cream or a hot drink they choose something with chocolate and peppermint.

I can envision lots of cups of peppermint hot cocoa being sipped this winter while we savor the Advent and Christmas season. This treat is sweetened with a bit of raw honey making it a sensible beverage that can be enjoyed most any day. If hot cocoa is not your thing, consider trying this peppermint mocha.

Peppermint Hot Cocoa

Ingredients

  • 4 cups milk (raw, goat, almond or coconut)
  • 1/3 cup cocoa powder
  • 1/4 cup raw honey or maple syrup
  • 1 tsp peppemint extract
  • 1 tsp vanilla extract
  • Whipped Cream (optional)
  • Homemade Marshmallows

Instructions

  1. Heat 3 3/4 cup of the milk in a small sauce pan. If you are using dairy carefull not to let the milk curdle. For raw milk it is best to not let it get any warmer than 110 F to preserve most of the benifical properties of the raw milk.
  2. In a small bowl or mug mix the remaining 1/4 cup milk, cocoa powder, hoeny and extracts. Stir with a fork or a small wisk until a smooth paste is formed.
  3. Once the milik is heated pour the cocoa paste into the milk and wisk until smooth.
  4. Serve each cup of cocoa with a generous dalop of whipped cream and a sprinkle of cocoa powder. You could also serve your cocoa with a homemade marshmallow or two.
