Peanut Butter Blosoms- Sheley’s Day

I love having special one on one times with my girls. Every time is a little different. We have a special lunch of their choice and then we do whatever they want. Sometimes we make cookies, take a walk to pick oranges, take a hike, play a game…. This tme when one of my eleven year olds, Sheley had her day we made cookies, peanut butter blossoms (and some chocolate mousse too). A simple, yummy protein filled cookie. It has five ingridients, peanut butter, sugar, egg, vanilla and dark chocolate.
Peanut Butter Bloosom Cookies
1-16 oz  peanut butter
3/4 cup succant
2 pastured eggs
1 TBS vanilla extract
1 bar dark chocolate, chopped into small squares (Green and Black’s or Trader Joe’s make good chocolates) or semi-sweet chocolate chips

Mix the peanut butter, succant, eggs and vanilla together. Roll into small 1/2  inch balls. Place on a baking sheet, three across. Bake at 350 degrees F for 20 minutes. While it is baking chop your dark chocolate. When I use Green and Black’s I just use the small retangle pieces as they are. For Trader Joe’s I cut eat rectangle in fourths. When I’m using chocolate chips I use 3 or 4 per cookie.  Remove the cookies from the oven and place a piece of dark chocolate on each cookie. Let cool and enjoy! Or eat while still hot for a gooey mess.

    i’m so surprised this doesn’t have any flour! looks like a lot of fun to make (: btw, i replied to your qn on stirfry on my blog, but just in case you don’t see it:

    you don’t need a cast iron wok that’s what I was saying, you can get a cheap carbon steel one, but season it properly and it’s more non-stick than any non-stick wok and will last you forever! the cheap ones are also lighter, and easier to toss. not sure about arrowroot starch, i know tapioca starch works too, if you have that…

    Sounds good. I don’t think I have ever made cookies without flour. They look yummy. Sheley is very cute and it looks like she was having a good time.
