Boneless, skinless chicken is slow-cooked with pineapple juice, honey, and soy sauce to make a simple and healthy crockpot teriyaki chicken that is the perfect weeknight meal.
Ingredients
5 boneless, skinless chicken thighs (or breasts)
1 cup canned pineapple chunks, reserving all the juice
1 cup soy sauce
1/4 cup honey
2 tablespoon grated ginger
1 medium onion, thinly sliced
2 cups chicken stock
Instructions
In a small bowl or jar, whisk together the soy sauce, pineapple juice, and honey.
Layer the chicken across the bottom of the slow cooker.
Layer the onions and pineapple on top of the chicken.
Sprinkle the grated ginger over the top.
Pour the soy sauce mixture and chicken broth over the chicken.
Cover and cook on low for 5-6 hours or on high for 2-3 hours.
Serve with steamed rice and vegetables, and sprinkle with sesame seeds if desired.
