Here’s a quick treat perfect for a summer morning, snack, or dessert. Normally I make green smoothies with spinach and kale but sometimes I like a pure fruit smoothie.
I love to go to the farmers market and buy their bruised fruit. Last summer I was able to buy organic peaches and nectarines for only $1 per pound! Most of them very only slightly bruised. I cut them up and froze them to make smoothies, canned slices, and made fruit sauce. The coconut milk kefir add a nice zing to the smoothie and is loaded with probiotics. If you don’t have any coconut milk kefir, plain whole fat coconut milk will taste good as well.
Creamy Nectarine Smoothie

Ingredients
- ½ cup coconut milk kefir (or plain coconut milk)
- About 2 cups of frozen nectarine slices (or peaches)
- 1 medium orange, seeded
- 1 cup pineapple chunks
Instructions
- Blend all together for a delicious meal or dessert.
