Spring is one of those times of the year where you have cool days and warmer ones. Light cardigans and jeans, skirts, bare feet, and flowers blooming are some of the makings of the season.

Cool mornings lend themselves to wrapping your hands around a mug filled with a cozy drink and just taking a few minutes to savor the day. There are all sorts of things that could be in your mug, tea, herbal infusions, coffee. I pretty much drink all of those in the same day. Somedays, okay, every day is also made all the more delightful if you add a cup of hot cocoa to it.

Of all the cozy drinks, hot cocoa probably takes the prize of the hygge in a cup. I’m a strong believer of embracing hygge year-round. Hot cocoa is one of those things to enjoy with the seasons as well.

Chai hot cocoa is delightful in the autumn, peppermint hot cocoa in the winter, so it only makes sense that spring would have it’s own as well.

Enter, lavender hot cocoa. Lavender can be polarizing. So many people seem to love or hate it. It’s true that lavender can lend itself to a “soapy” taste, but only when you are heavy-handed. When you use just a little lavender, it adds the perfect spring flavor to treats and beverages.

To make this creamy lavender hot cocoa, I like to start with a making a paste of the lavender simple syrup or honey, cocoa powder, unrefined salt, and collagen for an added protein boost! To snag my favourite collagen you can use the code SIMPLICITY10 to save 10%, right now you can save 40%.

There are a few ways to add a bit of lavender to the cocoa. My preferred method is to make a lavender simple syrup to keep on hand. You can also infuse the milk with lavender blooms, or you can mix a few drops of lavender essential oil into honey before adding it to the recipe.

  • Lavender Iced Latte

Smooth, rich cocoa with just a hint of lavender. This creamy lavender hot cocoa is the perfect cup to savor this spring!

Ingredients

  • 2 1/2 cups raw milk (or milk substitute of choice)
  • 3 tablespoons cocoa powder
  • 3 tablespoons lavender simple syrup*
  • 1 teaspoon homemade vanilla extract
  • 1 tablespoon collagen (optional) (Use SIMPLICITY10 ) to save 10%)
  • pinch of unrefined sea salt
  • whipped cream (optional)

Instructions

  • Heat the milk in a small saucepan. If you are using dairy careful not to let the milk curdle. For raw milk, it is best to not let it get any warmer than 110 F to preserve most of the beneficial properties of the raw milk. For frothy milk, use a milk frother.
  • In a small bowl or mug mix the cocoa powder, lavender simple syrup, and vanilla extract. Stir with a fork or a small whisk until a smooth paste is formed.
  • Divide the cocoa paste between two mugs. Pour in the milk and stir gently to mix.
  • Serve each cup of cocoa with a generous dollop of whipped cream if desired.

Notes

There are a few ways to add a bit of lavender to the cocoa. If you don't want to make lavender simple syrup there are a couple of options:

  • Steep one tablespoon of lavender blossoms in the milk for 10 minutes, then use two tablespoons of honey in place of the syrup.
  • Replace the simple syrup with two tablespoons honey and two drops lavender essential oil.
