Soaked Pancakes {Cooking Through Little House}

Ingredients
- 2 cups wheat wheat flour
- 2 cups kefir
- 2 eggs
- 1 tsp baking powder
- 1/2 tsp salt
- Butter
Instructions
- Mix the flour and kefir together. Cover and let soak over night.
- Preheat your skillet (preferably cast iron) over medium heat. While the skillet is heat mix the remaining ingredients into the batter.
- Once the skillet is hot add enough butter to coat it. Be sure not to let it get so hot that it smokes. Pour in enough batter to make whatever size pancakes you prefer. You know that they are ready to turn when small bubbles start to form and the edges get crispy. Flip over and cook for a couple of minutes.
- Plate and serve with apple butter, maple syrup and butter for a fall twist.
