Soaked Pancakes {Cooking Through Little House}

Mary and Laura…could smell bacon and coffee and hear pancakes sizzling, and they scrambled out of bed. They washed their hands and faces in the tin washbasin on the wagon-step. Ma combed every snarl out of their hair, while Pa brought fresh water from the creek. Then they sat on the clean grass and ate pancakes and bacon…from the tin plates in their laps. Soaked Pancakes {Cooking Through Little House}

Yield 4 -5

Ingredients

  • 2 cups wheat wheat flour
  • 2 cups kefir
  • 2 eggs
  • 1 tsp baking powder
  • 1/2 tsp salt
  • Butter

Instructions

  1. Mix the flour and kefir together. Cover and let soak over night.
  2. Preheat your skillet (preferably cast iron) over medium heat. While the skillet is heat mix the remaining ingredients into the batter.
  3. Once the skillet is hot add enough butter to coat it. Be sure not to let it get so hot that it smokes. Pour in enough batter to make whatever size pancakes you prefer. You know that they are ready to turn when small bubbles start to form and the edges get crispy. Flip over and cook for a couple of minutes.
  4. Plate and serve with apple butter, maple syrup and butter for a fall twist.

    i love the idea of cooking from the Little House books…they were favorites when i was little! still remember trying to make the maple sugar candy by squeezing “Aunt Jemima” syrup on snow (it didn’t work ;)). I can’t wait to try these yummy pancakes this weekend!

    I think the best thing about pancakes is that they smell like love. Or at least, I think so, because the only time I’ve ever eaten them is if someone I love has made them for me. Thanks for sharing your recipe with the Hearth and Soul hop. Love the kefir.

    MMMMMmm, pancakes. I’m so happy to see you cooking through the Little House Books!! I always like to use the pancake recipe from Almanzo- lots of butter and molasses! Take care and keep up the good work,
