With warmer weather on the way this simple frappuccino is a refreshing and special treat to cool off. Fraps from your regular coffee shop are loaded with pasteurized milk (or soy milk), sugary syrup and all sorts of artificial ingredients. This one has wholesome and simple ingredients that make it a guilt free special treat. (Though I have to admit that I’ve made it twice in two days)

Coconut Frappuccino

2 cups strong coffee
1 cup coconut milk
4-6 cups  ice cubes
1/4 cup maple syrup
2 tsp vanilla extract
1/2 tsp stevia powder

Combined all the ingredients in a blender. Blend until smooth. If you feel like it needs more sweetener increase the amount of maple syrup or add another pinch or two of stevia.

What a delicious treat! I love the idea of using coconut milk as we are moving away from dairy.

I´m smiling big right now because I´m happy to have found you! I also live in Mexico and work hard and happy, everyday, to make my home as green, healthy and independant as possible, this all began inspired by a deadly illness my son survived. This I am very passionate about, he has brought us all back to life. I will be peeking in to visit often!!!! Un gusto conocerte!
