Cherry Chocolate Chunk Ice Cream

Ice cream, what a perfect treat for a hot summer day.  One of my dad’s favorite ice creams is Ben and Jerry’s Cherry Garcia. When Father’s Day rolled around I decided to replicate it as part of his gift. I am very pleased with how well this turned out. Not only are all the ingredients organic but this recipe makes more than three times the amount of Ben and Jerry’s little containers for about the cost of one. Everyone who ate it thought that it tasted as good if not better. Success!

Cherry and Chocolate Chunk Ice Cream

 2 cup raw cream

1 cup raw milk

1 cup palm sugar or ½ cup of honey

½ cup quartered fresh Bing cherries

1 cup dark chocolate chips/coarsely chopped

2 pastured eggs

2 TBS vanilla

In a blender combine the cream, milk, palm sugar or honey, eggs and vanilla. Blend until completely smooth.Freeze mixture in your ice cream maker according to the manufacturer’s instruction.

While the ice cream is quarter the cherries and put aside. If you are using a chocolate bar, chop coarsely and set aside.

When the ice cream is done churning, quickly pour into container and fold in the cherries and dark chocolate. Serve immediately or place in freezer to firm up for a couple hours before serving.
