Quick bites of protein that almost feel like a dessert- carob and almond energy bites are exactly that!
Ingredients
1 cup raw almonds
1 1/2 cups whole dates
1 cup shredded coconut
1/2 + 1/4 cup unsweetened carob buttons
Carob or cocoa powder (optional)
Additional shredded coconut (optional)
Instructions
Add all the ingredients to a food processor. Puls a few times, then continue to process until the mixture is crumbly. Continue to pulse until all the ingredients are uniform in size.
Shape into small balls, (I prefer 1-inch in circumference), pressing together firmly with your hands to be sure the bites stay together.
If desired rolls the bites in carob/cocoa powder or shredded coconut.
Place all the bites on a small cookie sheet and freeze for at least 30 minutes. Remove from the sheet and store in a container or resealable freezer bag. The will last for at least two weeks in the fridge and several months in the freezer.
