Simple Sourdough Boule

Crunchy, chewy, sourdough bread, with only a few simple steps this may be the easiest simple sourdough boule you have ever made.

  1. Mix 3 cups of flour, salt, and sugar together in a bowl. 
  2. Mix the water and oil in the jar with your stater. Shake it up and pour into the dry ingredietns. 
  3. Stir with your hands or a Danish dough wisk until just mixed. Don't add the remianing flour yet. Cover and let rest for at least 20 minutes. If the dough is still too wet, add the remaining flour. 
  4. Cover with a damp towel or lid. Let sit for 8 to 12 hours. (If you want it more tangy you can go longer.) 
  5. Every hour or so if you feel like it, strech and fold the dough.
  6. Scrap the dough onto a lightly floured surface. 
  7. Flatten the bread, fold in the sides like an envelope. Flip it over seamside down and let sit for about 10 minutes .
  8. Form a tight loaf by tucking the side of the bread underneath itself several times. 
  9. Put seam side up in a prooving basket or a bowl lined with a floursack towel and dusted with flour.
  10. Leave uncovered to rise for about 1 1/2 hours until almost doubled in size. This can take more or less time depending on the temperature of your house. 
  11. 30 minutes before you are ready to bake turn the oven on to 500º. 
  12. Once the dough has risen turn out onto a piece of partchement paper. Make at least one deep slash in the dough 3/4 -1 inch deep. 
  13. Gently lower into a dutch oven or other oven-safe covered pot. Place the lid on and stick it in the oven. 
  14. Reduce the temperature to 450º. Bake for 25 minutes. 
  15. Uncover and bake for an addtional 15-20 minutes or until the bread has an internal temperature of 200º. 
  16. Put on a wire rack to cool. Wait for an hour (or at least 30 minutes) for the bread to cool.
