I have to credit my little sister Emily for the idea behind this recipe. I was visiting my parents last summer and she served us a mousse so delightful that I had to make myself some. It is a quick and easy desert that gives a flare of elegance. So simple, yet so delicious! It only has four ingredients minus any optional garnishes; heavy cream, cocoa powder, honey and vanilla extract. If possible it is better to use raw ingredients to make this for the added benefit of better digestion, essential vitamins and beneficial bacteria. I would have loved to use raw cream to make this but sadly that is not in my budget. I just use organic non homogenized, pasteurized heavy cream, not ideal but a little better. I don’t have any raw cocoa powder either but I do have amazing local raw honey!
1 pint heavy cream
1/2 cup cocoa powder
3 TBS honey
1 TBS vanilla extract
Whip all the ingredients together with a hand mixer until fluffy. Scoop into little dishes or use a bag and pipe into the dishes. Garnish with desired mint leaves or fruit.
